Kidney Bean Patties - Purslane Salad with Yogurt - Plums and Cherries

INGREDIENTS

1 serving
Red beets 2 medium (200 g)
Kidney Beans 2 cups (300 g)
Egg 1 (50 g)
Onion 1 medium (100 g)
Breadcrumbs 2 tbsp (30 g)
Parsley 1 handful (6 g)
Sunflower oil 6 tbsp (60 g)
Cumin
Red pepper flakes
Salt
Black pepper

RECIPE

Put the kidney beans in a pot. Add enough water to cover the beans, and boil until soft. When they are cool, puree in a food processor. Chop the onion and the parsley. Mix all ingredients with the kidney beans. Refrigerate the mixture for 30 minutes. Take walnut-sized pieces from the mixture and form into patties. Coat the patties with breadcrumbs and fry in preheated oil.
