Grilled Vegetable Sandwich - Tzatziki with Mint - Red Grapes

INGREDIENTS

4 servings
Zucchini 1 medium sized
Eggplant 1 medium sized
Pepper 2 medium sized
Whole Grain Sandwich Bread 8 pieces
White Cheese 4 matchboxes (100 g)
Basil
Thymus

RECIPE

Wash zucchini and eggplant, peel them. Cut in slices. Place them o a grill or in a pan, cook until they are lightly softened. Place slices of zucchini and eggplant on sandwich breads, drizzle basil and thymus and add 1 slice of white cheese. Toast the bread in the pre-heated toaster for 2 minutes and serve hot.
